  • 2 boneless ribeye steaks (1 inch thick)
  • 8 oz mixed fresh mushrooms (cremini and button)
  • 4 oz Brie cheese
  • 1/2 cup heavy cream
  • 2 tsp freshly cracked peppercorns
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt to taste
  • Fresh parsley (for garnish)

Instructions

  1. Bring the ribeye steaks to room temperature for about 30 minutes and pat them dry. Season both sides generously with salt and freshly cracked pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the steaks for 4-5 minutes on each side until golden brown.
  3. Remove the steaks from the skillet and add mushrooms and minced garlic. Sauté until mushrooms are golden brown, about 5-7 minutes.
  4. Lower the heat, then add heavy cream and chunks of Brie to the skillet, stirring until melted and smooth.
  5. Return the steaks to the skillet, spooning sauce over them for an additional minute or two. Garnish with chopped parsley before serving.
