  • ½ cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • ½ cup unsalted butter (melted)
  • 1 cup fresh raspberries (halved)
  • 2 tbsp instant coffee granules
  • 2 tbsp warm water
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix graham cracker crumbs, cocoa powder, and powdered sugar.
  3. In a saucepan, melt butter over low heat; let cool slightly.
  4. Dissolve instant coffee in warm water; mix with vanilla extract and melted butter.
  5. Combine wet and dry ingredients until well mixed, then gently fold in raspberries and chocolate chips.
  6. Pour the mixture into the prepared dish, press down firmly, and refrigerate for at least 2 hours until set.
  7. Once firm, lift out using parchment paper and cut into squares.
