  • 8 oz pappardelle pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 head roasted garlic
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast until golden brown (about 30 minutes).
  2. In a large pot, bring salted water to a boil. Add pappardelle pasta and cook according to package instructions until al dente; drain.
  3. In a skillet over medium heat, add olive oil. Sauté the shrimp seasoned with salt and pepper until pink (about 3-4 minutes). Remove shrimp from skillet.
  4. Squeeze roasted garlic cloves into the skillet, stir in heavy cream over medium heat until slightly thickened.
  5. Return shrimp to skillet along with cooked pasta; stir gently until coated in sauce. Add grated Parmesan before serving.
  6. Top with parsley and serve warm.
