  • 1 cup pumpkin puree (100% pure)
  • 1 cup toasted pecans, chopped
  • 3 large eggs
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • Whipped cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. Prepare the cake mix according to package instructions.
  3. In a bowl, mix pumpkin puree, sugar, cinnamon, nutmeg, and eggs until smooth.
  4. In another bowl, combine chopped pecans with brown sugar and a dash of cinnamon.
  5. Pour one layer of cake batter into each pan. Spoon half of the pumpkin filling over one layer and sprinkle with half of the pecan mixture before adding another layer on top. Repeat with remaining fillings.
  6. Bake for 35-40 minutes or until a toothpick comes out clean. Allow layers to cool completely before stacking.
  7. Decorate with whipped cream and extra pecans before serving.
