  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 3 large eggs
  • 1 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 2 pre-made pie crusts
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and a pinch of salt. Gradually mix into the wet ingredients without overmixing.
  4. Slowly add milk until the batter is smooth.
  5. Pour half the batter into one prepared pan. Place one pie crust on top, spread pumpkin puree over it, then add more batter. Repeat in the second pan.
  6. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean. Cool completely before removing from pans.
  7. Layer cakes on a serving platter with pecan icing between layers and drizzle additional icing on top.
