  • 2 cups whole milk (or almond milk)
  • 1/4 cup granulated sugar
  • 1 cup brewed espresso (cooled)
  • 8 oz mascarpone cheese
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Prepare the crepe batter by whisking together flour, eggs, milk, and a pinch of salt until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour in about 1/4 cup of the batter and swirl to coat evenly. Cook for 1-2 minutes until edges lift easily; flip and cook for another minute until golden brown.
  3. In a bowl, combine mascarpone cheese, sugar, and cooled espresso. Whip until creamy.
  4. Assemble the cake by layering crepes with the mascarpone filling until all are used (aim for 10-12 layers).
  5. Sift cocoa powder over the top layer and refrigerate for at least 4 hours, preferably overnight.
