  • 1 cup granulated sugar
  • 2 tsp baking powder

  • 2 large eggs (room temperature)
  • 1 cup whole milk (or dairy-free alternative)
  • ½ cup unsalted butter (melted and slightly cooled)
  • 1 ½ cups chopped apples (Granny Smith or Honeycrisp)
  • ¼ cup cinnamon sugar topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat eggs, then mix in milk and melted butter until well combined.
  4. Gently fold chopped apples into the wet mixture.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined; lumps are okay!
  6. Fill muffin cups two-thirds full with batter and sprinkle with cinnamon sugar topping.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
