  • 1 store-bought pie crust
  • 6 slices thick-cut bacon
  • 2 leeks, cleaned and sliced
  • 4 large eggs
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded Gruyère or Cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook bacon in a skillet over medium heat until crispy (8-10 minutes). Drain on paper towels.
  3. In the same skillet, sauté sliced leeks until soft (about 5 minutes).
  4. In a bowl, whisk eggs and heavy cream. Stir in cheese, crumbled bacon, sautéed leeks, salt, and pepper.
  5. Fit the pie crust into a 9-inch pie dish. Pour filling into the crust.
  6. Bake for 35-40 minutes until golden brown and set.
  7. Cool for at least 10 minutes before slicing.
