  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar

  • 2 tbsp Dijon mustard
  • 1/2 cup beef broth

Instructions

  1. In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, brown sugar, garlic, salt, and pepper to make the marinade.
  2. Marinate the beef in a resealable bag or container for at least two hours or overnight.
  3. Preheat the oven to 325°F (160°C). Sear the marinated roast in a skillet over medium-high heat until browned (about 3-4 minutes per side).
  4. Place the seared roast in a roasting pan with rosemary and pour remaining marinade over it. Add beef broth.
  5. Roast in the oven for about 1 hour until reaching an internal temperature of 135°F (57°C) for medium-rare. Baste occasionally.
  6. In the last 15 minutes of cooking, brush additional balsamic glaze on the roast. Let rest for 10-15 minutes before slicing.
