  • 34 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup fresh or canned pineapple rings
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 4 slices thick sourdough bread

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken breasts with salt and pepper; grill for about 6-8 minutes per side until fully cooked. Let rest.
  2. Shred the chicken in a bowl and mix in BBQ sauce until well-coated.
  3. Butter one side of each slice of sourdough. On the unbuttered side of one slice, layer half the cheddar and mozzarella, followed by the BBQ chicken mixture and a pineapple ring. Top with more cheese and another slice of bread (buttered side out).
  4. Grill the sandwich for approximately 4-5 minutes on each side until golden brown and cheese is melted.
  5. Allow to cool slightly before slicing in half and serving warm.
