Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large sweet potatoes (about 1 lb), peeled and cubed
  • 1 cup BBQ sauce (homemade or store-bought)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes in olive oil, salt, and pepper. Spread them in an even layer on the baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes until tender and golden.
  4. While the potatoes roast, season chicken breasts with salt and pepper. Heat a skillet over medium heat with a splash of olive oil and sear the chicken for about 5 minutes per side until golden brown.
  5. Once cooked through (internal temperature of 165°F/75°C), add BBQ sauce to the skillet, allowing it to simmer for about 5 minutes.
  6. Assemble your bowls by layering roasted sweet potatoes topped with sliced BBQ chicken. Drizzle additional BBQ sauce if desired and garnish with fresh cilantro.
