  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 dried pasilla chiles
  • 3 dried ancho chiles
  • 4 garlic cloves, minced
  • 1 medium yellow onion, chopped
  • 2 cups beef broth (low-sodium)
  • 2 tsp ground cumin
  • 1 tsp dried Mexican oregano
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Remove stems and seeds from pasilla and ancho chiles. Toast in a dry skillet over medium heat for 2-3 minutes until fragrant.
  2. Soak toasted chiles in hot water for 15-20 minutes until soft.
  3. In a large pot, heat oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic for another minute.
  4. Blend soaked chiles with some soaking liquid until smooth; add cumin, oregano, salt, and pepper while blending.
  5. Brown seasoned beef in the pot for about 8-10 minutes before adding the blended sauce.
  6. Add beef broth to cover meat; bring to a boil, then reduce heat to low and simmer covered for 2-3 hours until beef is tender.
