Birria ramen is a delicious fusion dish that combines the rich, aromatic flavors of traditional Mexican birria with the comforting slurp of ramen noodles. This hearty meal features tender beef simmered in a spicy broth, topped with fresh radishes and lime for a burst of brightness.

  • 2 lbs beef chuck roast, cut into chunks
  • 4 dried guajillo chiles, soaked
  • 1 large sweet onion, chopped
  • 6 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 8 oz fresh ramen noodles
  • 4 fresh corn tortillas
  • 1 cup sliced radishes
  • 2 lime wedges

Instructions

  1. Soak the dried guajillo chiles in hot water until soft. Blend with garlic, onion, and spices until smooth to create the marinade.
  2. Coat the beef chunks in the marinade and let sit for at least 1 hour (or overnight).
  3. Sear marinated beef in a large pot over medium-high heat until browned on all sides.
  4. Add beef broth and remaining marinade to the pot. Bring to a boil, then reduce heat and simmer for about 2 hours until beef is fork-tender.
  5. Cook ramen noodles according to package instructions; drain.
  6. Assemble bowls by placing noodles at the bottom and ladling hot birria broth over top. Garnish with shredded beef, radishes, and lime wedges.
