Ingredients

Scale
  • 1 bone-in ham (57 lbs)
  • 1 cup fresh blueberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons fresh thyme leaves
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat your oven to 325°F (160°C) and place the bone-in ham in a roasting pan. Score the surface in a diamond pattern.
  2. In a saucepan, combine blueberries, balsamic vinegar, brown sugar, thyme leaves, mustard, and black pepper. Heat over medium until bubbling and thickened.
  3. Pour half the glaze over the scored ham, allowing it to seep into the cuts. Reserve the other half for basting.
  4. Cover the pan loosely with foil and bake for about 1 hour (15 minutes per pound), basting every 10 minutes with reserved glaze during the last 30 minutes without foil.
  5. Let the ham rest for 15 minutes before slicing and serve drizzled with extra glaze.
