  • 1 cup Boursin cheese (garlic & herb)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil.
  2. Boil salted water in a large pot and cook penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook for about two minutes until wilted.
  4. In a large bowl, combine cooked pasta, wilted spinach, Boursin cheese, heavy cream, Parmesan cheese, salt, and pepper. Mix until well combined.
  5. Transfer the mixture to the greased baking dish and spread evenly.
