  • 1 cup whole wheat flour
  • 1 cup bran flakes
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (or almond milk)
  • 2 large eggs
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1/2 cup dried fruit or nuts (raisins or walnuts) – optional

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, bran flakes, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, eggs, and vegetable oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined—lumpy batter is fine!
  5. If desired, fold in dried fruit or nuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes until golden brown; a toothpick inserted should come out clean.

Keywords: For added moisture and flavor, consider substituting applesauce for some of the oil. Experiment with spices like cinnamon or nutmeg to enhance flavor.
