Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish with nonstick spray.
  2. In a bowl, mix chopped mozzarella, halved cherry tomatoes, basil, olive oil, salt, and pepper.
  3. Slice chicken breasts horizontally to create pockets without cutting all the way through.
  4. Generously fill each pocket with the mozzarella mixture.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear stuffed chicken for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let rest for 5 minutes before drizzling balsamic glaze over each breast and serving.
