  • 2 large eggs
  • 2 teaspoons rapid-rise yeast
  • ½ cup unsalted butter, melted
  • 1 cup warm milk
  • 1 teaspoon vanilla extract
  • For frosting: 8 oz cream cheese, softened; 2 cups confectioners’ sugar; 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine warm milk and yeast; let sit until foamy (about 5 minutes).
  2. Add flour, granulated sugar, eggs, melted butter, cinnamon, nutmeg, and grated carrots. Mix until just combined.
  3. Transfer dough to a floured surface and knead gently until smooth (5-7 minutes).
  4. Place in a greased bowl, cover with a damp cloth, and let rise in a warm area until doubled in size (about 1 hour).
  5. While dough rises, mix brown sugar with cinnamon for the filling.
  6. Roll out the dough into a rectangle and spread softened butter over it. Sprinkle the cinnamon-sugar mixture evenly on top.
  7. Roll the dough tightly from one end to another and slice into approximately 12 equal pieces.
  8. Place rolls cut-side up in a greased baking dish and let rise for another 30 minutes.
  9. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  10. For frosting: Blend cream cheese with confectioners’ sugar and vanilla extract until smooth. Spread over warm rolls before serving.
