  • 2 cups grated carrots (about 3 medium carrots)
  • 1 cup diced pineapple (canned, in juice)
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3/4 cup brown sugar (light)
  • 8 oz cream cheese (full-fat, softened)
  • 1 cup powdered sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, diced pineapple, flour, cinnamon, nutmeg, and brown sugar until combined.
  3. Spread the mixture onto a lined baking sheet and bake for 20-25 minutes or until golden brown.
  4. Let the baked mixture cool completely on a wire rack.
  5. In another bowl, beat together cream cheese and powdered sugar until smooth.
  6. Crumble the cooled carrot cake into small pieces in a large bowl, adding half of the frosting mixture to create a moldable dough.
  7. Roll small portions into balls and coat with remaining frosting or chopped nuts if desired.
