Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add vegetable oil and eggs; mix until just combined.
  4. Fold in grated carrots, walnuts, and raisins if using.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 25–30 minutes or until a toothpick comes out clean.
  7. While cooling, beat cream cheese, powdered sugar, and vanilla until smooth. Frost cooled cake generously.
