  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • ½ cup fresh cilantro, chopped
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup salsa verde
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a slow cooker or pressure cooker, combine chicken breasts with cumin and chili powder. Cook on low for about 6 hours or under pressure for 30 minutes until tender. Shred the chicken with forks.
