  • 2 boneless, skinless chicken breasts (about 8 oz each)
  • 1 ripe avocado
  • 4 oz sharp cheddar cheese, sliced
  • 4 slices sourdough bread
  • 1 cup fresh spinach leaves
  • 2 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side until golden brown and cooked through.
  2. Let the chicken rest for a few minutes before slicing it into thin strips.
  3. Toast two slices of sourdough in the same skillet until golden brown on both sides.
  4. On one slice of toasted bread, layer sliced chicken and top with cheddar cheese. Place another slice of bread on top and cook until the cheese melts (about 2-3 minutes), pressing down gently.
  5. Remove from heat and add spinach leaves and avocado slices. Top with the remaining slice of bread to finish your sandwich.
  6. Slice if desired, plate, and enjoy!
