  • 6 oz pancetta or bacon
  • 3 cloves fresh garlic, minced
  • 8 oz spaghetti or fettuccine
  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • Salt, to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot. Add pasta and cook until al dente (8-10 minutes). Reserve some pasta water before draining.
  2. Sauté Chicken and Pancetta: In a skillet over medium heat, sauté diced chicken in olive oil until golden brown (5-7 minutes). Add diced pancetta and cook until crispy.
  3. Add Garlic: Stir in minced garlic for about 30 seconds until fragrant.
  4. Combine Ingredients: Toss cooked pasta with chicken and pancetta in the skillet.
  5. Create the Sauce: Whisk eggs and Parmesan in a bowl. Remove skillet from heat and quickly mix in the egg mixture with the pasta to create a creamy sauce.
  6. Adjust Consistency: Season with black pepper and add reserved pasta water if necessary.
