  • 12 manicotti pasta tubes
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh spinach
  • 1 cup whole milk ricotta cheese
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cook manicotti according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, cook seasoned chicken breasts for 6-7 minutes per side until golden brown. Let cool, then shred.
  3. In a bowl, mix shredded chicken, ricotta cheese, wilted spinach, garlic powder, salt, and pepper until creamy.
  4. Stuff each manicotti tube with the chicken mixture and place them snugly in an oiled baking dish.
  5. Pour half of the Alfredo sauce over the stuffed manicotti. Cover with foil and bake for about 25 minutes.
  6. Remove foil, sprinkle mozzarella and Parmesan on top, then bake uncovered for another 10-15 minutes until golden brown.
