  • 1/2 cup Italian breadcrumbs
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 garlic cloves, minced
  • 1 large egg
  • 1 cup marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, minced garlic, egg, parsley, and half of the parmesan cheese. Mix until evenly combined but avoid overworking.
  2. Scoop and shape the mixture into balls about 1 to 1.5 inches in diameter.
  3. Heat olive oil in a skillet over medium heat. Brown the meatballs in batches for about 5-7 minutes until golden on all sides.
  4. Pour marinara sauce over the browned meatballs, cover, and simmer on low heat for 10 minutes.
  5. Sprinkle shredded mozzarella on top of the meatballs and cover until melted.
  6. Garnish with remaining parmesan and serve warm.
