  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain yogurt
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk or heavy cream
  • Salt & pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Marinate the chicken by combining yogurt, garlic, ginger, cumin, and turmeric in a bowl. Coat the chicken and refrigerate for at least 1 hour or overnight.
  2. In a skillet over medium heat, cook the marinated chicken in batches until golden brown (approximately 5 minutes per side). Set aside.
  3. Sauté diced onions in the same skillet until translucent (about 4-5 minutes). Add more garlic and ginger before mixing in the crushed tomatoes.
  4. Stir in coconut milk or cream and simmer on low heat for about 10 minutes until thickened.
  5. Return the chicken to the sauce and simmer for an additional 10 minutes. Garnish with cilantro before serving.
