Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  3. In another bowl, mix granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and glossy.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Cover and chill the dough in the refrigerator for at least 30 minutes.
  6. Scoop tablespoon-sized portions of dough, roll into balls, then coat each ball in powdered sugar.
  7. Place on prepared baking sheets about two inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
