  • 1/4 cup unsweetened cocoa powder
  • 1 3/4 cups confectioners’ sugar
  • 3 large egg whites (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter (for filling)
  • 1/2 cup dark chocolate (for ganache filling)
  • 1/4 cup heavy cream (for ganache filling)

Instructions

  1. Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. Sift together almond flour, cocoa powder, and confectioners’ sugar in a bowl.
  3. In a clean mixing bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold the sifted dry mixture into the whipped egg whites until just combined.
  5. Transfer batter to a piping bag fitted with a round tip; pipe 1-inch circles on baking sheets.
  6. Let macarons rest at room temperature for about 30 minutes until they form a skin.
  7. Bake for 15-18 minutes; let cool completely before removing from sheets.
  8. For the ganache, heat heavy cream and pour over chopped dark chocolate; stir until smooth and let cool until firm.
  9. Pipe ganache onto half of the macaron shells and sandwich them with the remaining halves.
