  • 2 medium zucchini, grated
  • 1 ½ cups all-purpose flour

  • ¾ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder

  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or melted butter)
  • 2 tsp pure vanilla extract
  • ½ cup semi-sweet or dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch pan or line with parchment paper.
  2. Grate zucchini and squeeze out excess moisture using a dish towel.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, beat eggs with sugar until fluffy. Mix in oil and vanilla until smooth.
  5. Fold grated zucchini into wet ingredients, then gradually add dry mixture without overmixing. Optionally stir in chocolate chips.
  6. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
