  • 1 tbsp instant coffee granules
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy.
  4. Mix in eggs one at a time and then add vanilla extract.
  5. Stir in instant coffee granules until dissolved.
  6. Gradually combine dry ingredients with the wet mixture until just mixed.
  7. Scoop dollops onto lined baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes until edges are golden but centers are soft. Allow to cool slightly before serving.
