  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 1/4 cup)
  • 1 jalapeño, seeded and diced (optional)
  • 2 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Rinse and drain the black beans and corn thoroughly. Dice the red bell pepper and red onion into small pieces. Chop the cilantro finely.
  2. In a large mixing bowl, combine all prepared ingredients: beans, corn, peppers, onions, jalapeño (if using), and cilantro. Stir gently until evenly mixed.
  3. Drizzle olive oil over the mixture along with freshly squeezed lime juice. Toss to coat all ingredients.
  4. Taste and adjust seasoning with salt or additional lime juice as desired.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
