  • 4 medium sweet potatoes (about 2 lbs)
  • 1 cup fresh cranberries (or ½ cup dried)
  • 1 cup diced Granny Smith or Honeycrisp apples
  • 4 tbsp unsalted butter
  • 1 tsp ground cinnamon
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes; prick with a fork.
  2. Bake sweet potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Let cool slightly, then slice in half lengthwise and scoop out most of the flesh into a bowl.
  4. Mix sweet potato flesh with cranberries, diced apples, butter, cinnamon, brown sugar, salt, and pepper until smooth with some chunks remaining.
  5. Spoon mixture back into potato skins and return them to the oven for another 15-20 minutes until heated through and golden on top.
