Cranberry bacon jam is a delectable blend of sweet tart cranberries and smoky bacon, perfect for elevating your meals.   • 2 cups fresh cranberries (about 200g)
  • 6 oz thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 1/2 cup dark brown sugar (packed)
  • 1/4 cup apple cider vinegar
  • 1/4 cup pure maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground allspice

Instructions

  1. In a large skillet over medium heat, cook chopped bacon until crispy, about 8-10 minutes. Reserve about 1 tbsp of the fat.
  2. Remove excess grease from the skillet; add diced onions and sauté until golden brown, approximately 5-7 minutes.
  3. Stir in cranberries, brown sugar, and maple syrup. Simmer until the cranberries burst, around 10 minutes.
  4. Add apple cider vinegar, cinnamon, and allspice; cook for an additional 5 minutes until thickened.
  5. For a smoother texture, blend with an immersion blender or in a food processor.
