  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar (divided)
  • 1 cup fresh or frozen cranberries
  • 3 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 tsp baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, 1/4 cup granulated sugar, and softened butter until crumbly. Press into the prepared baking dish.
  3. Bake for 15 minutes until lightly golden.
  4. Whisk together eggs, remaining sugar, lemon juice, lemon zest, and baking powder in another bowl. Gently fold in cranberries.
  5. Pour filling over baked crust and bake for another 20-25 minutes until set.
  6. Allow to cool completely before slicing into squares. Dust with powdered sugar before serving.
