  • 6 cups stale bread, torn into pieces
  • 2 cups fresh or frozen cranberries
  • 1 cup fresh orange juice (about 4 oranges)
  • Zest of 1 orange
  • 4 large eggs
  • 2 cups milk or cream
  • 1 cup granulated sugar (or brown sugar)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp butter, for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a large bowl, combine the torn bread pieces.
  3. In another bowl, whisk together milk, eggs, orange juice, sugar, vanilla extract, cinnamon, and orange zest until smooth.
  4. Pour the egg mixture over the bread and gently fold until well-coated. Let sit for 15 minutes.
  5. Fold in cranberries and transfer the mixture to the greased baking dish.
  6. Bake for 45-50 minutes until golden brown.
  7. Allow to cool slightly before serving warm with whipped cream or vanilla ice cream.
