  • 1 cup fresh cranberries
  • 1 large orange (zest and juice)
  • ½ cup honey or maple syrup
  • ¼ cup unsalted butter or coconut oil (melted)
  • ½ cup chopped nuts (optional)
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix the oats, chopped nuts (if using), and salt until well combined.
  3. Zest the orange into the dry mixture and then juice it to yield about half a cup of liquid.
  4. Add the honey (or maple syrup) and melted butter (or coconut oil) to the bowl; stir until everything is evenly coated.
  5. Gently fold in the fresh cranberries without breaking them.
  6. Spread the mixture evenly in the prepared baking dish and bake for 25-30 minutes until golden brown.
  7. Allow to cool completely before cutting into squares.
