Creamy Buffalo Chicken Cauliflower Casserole is a delightful blend of spicy buffalo chicken and savory roasted cauliflower, all enveloped in a rich, creamy sauce.   • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups cauliflower florets (fresh)
  • 4 oz cream cheese (softened)
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves fresh garlic (minced)
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried parsley

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper and bake for about 25 minutes or until cooked through.
  3. Toss cauliflower florets with olive oil, season with salt and pepper, and roast on a baking sheet for about 20 minutes until tender.
  4. In a bowl, mix softened cream cheese with minced garlic and buffalo sauce until smooth.
  5. Combine roasted cauliflower and cooked chicken in the baking dish; pour the creamy sauce over it.
  6. Sprinkle shredded cheeses on top and bake for an additional 15-20 minutes until bubbly and golden brown.
  7. Let cool slightly before serving.
