  • 1 pound fresh gnocchi

  • 2 shallots, diced
  • 6 fresh sage leaves, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, drizzle with olive oil, and roast until tender (about 30-40 minutes).
  2. In a skillet over medium heat, cook the Italian sausage until browned. Remove and set aside.
  3. Sauté diced shallots and chopped sage in the same skillet until translucent.
  4. Scoop the roasted squash into the skillet and stir in heavy cream to create a sauce.
  5. Boil salted water in another pot; add gnocchi and cook until they float (2-3 minutes). Drain well.
  6. Toss cooked gnocchi in the sauce mixture and serve topped with Parmesan cheese.
