  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 6 oz chorizo sausage (spicy or mild)
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken breasts seasoned with salt and pepper; cook for about 6-8 minutes until golden brown and cooked through. Remove from skillet.
  2. Add sliced chorizo to the same skillet; cook until slightly crispy. Remove and set aside.
  3. In the same skillet, add diced onion and minced garlic; sauté for 3-4 minutes until translucent. Stir in heavy cream and chicken broth; mix well.
  4. Add orzo to the creamy mixture and simmer for about 10-12 minutes until al dente.
  5. Fold in fresh spinach until wilted (1-2 minutes). Return chicken and chorizo to the skillet; mix well and cook for an additional 2-3 minutes.
