  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 tbsp ginger paste
  • 1 cup full-fat plain yogurt
  • 1 can (13.5 oz) unsweetened coconut milk
  • 2 tbsp curry powder
  • 1 cup tomato puree
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Salt & pepper to taste
  • 2 tbsp cooking oil or ghee

Instructions

  1. Marinate the chicken: Combine yogurt, garlic, ginger paste, curry powder, salt, pepper, and diced chicken in a bowl. Marinate for at least 30 minutes.
  2. Sauté onions: Heat oil in a large skillet over medium heat. Add chopped onions and sauté until golden brown, about 5-7 minutes.
  3. Simmer sauce: Stir in tomato puree and remaining curry powder. Allow to simmer gently for about 10 minutes until thickened.
  4. Add chicken and coconut milk: Pour in coconut milk while stirring gently. Add marinated chicken pieces and cook for about 15-20 minutes until the chicken is tender, stirring occasionally.
  5. Finish with cilantro: Once cooked through and the sauce is thickened to your liking, sprinkle chopped cilantro on top before serving.
