  • 4 cloves fresh garlic, minced
  • 2 cans (15 oz each) white beans, drained
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chilies
  • 8 oz cream cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot and season with salt and pepper.
  2. Add minced garlic on top of the chicken.
  3. Pour in the chicken broth until the ingredients are submerged.
  4. Sprinkle drained white beans and diced green chilies over the mixture.
  5. Add cumin and chili powder, gently stirring to combine.
  6. Cut cream cheese into cubes and place on top without stirring.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender enough to shred.
