  • 2 lbs beef chuck roast, cut into chunks
  • 2 medium sweet onions, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red and green), diced
  • 8 oz cremini mushrooms, sliced
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tbsp smoked paprika
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides (about 5 minutes). Remove from pot.
  2. In the same pot, sauté onions and garlic in the beef drippings until soft (about 4 minutes).
  3. Add bell peppers and mushrooms; cook until slightly softened (about 3 minutes).
  4. Return beef to the pot; stir in broth, paprika, mustard, salt, and pepper. Simmer gently for 30 minutes.
  5. Reduce heat; stir in sour cream until warmed through—do not boil.
  6. Serve over egg noodles or rice and garnish with fresh parsley if desired.
