Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 oz fresh cremini mushrooms, sliced
  • 1 cup heavy cream (or half-and-half)
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat until shimmering. Sear the chicken until golden brown on both sides, about 5-6 minutes each side. Remove and set aside.
  2. In the same skillet, melt butter and add sliced mushrooms. Sauté until browned and tender, about 8 minutes. Add minced garlic and cook until fragrant.
  3. Pour in chicken broth, scraping up any browned bits from the pan. Simmer for 5 minutes before adding heavy cream and dried thyme; stir well.
  4. Return seared chicken to the skillet and simmer for an additional 10 minutes until cooked through and coated in sauce.
  5. Serve over rice or pasta, garnished with fresh parsley.
