  • 4 strips thick-cut bacon, chopped
  • 1 cup frozen peas
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a skillet, cook chopped bacon over medium heat until crispy (6-8 minutes). Transfer to paper towels to drain.
  3. In a large bowl, whisk mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Stir in frozen peas and red onion into the dressing mixture.
  5. Fold in cooled pasta and crispy bacon until well combined. Chill in the fridge for at least 30 minutes before serving.
