Tender salmon fillets are enveloped in a rich, creamy sauce infused with garlic and brightened by lemon zest, all tossed with al dente fettuccine.   • 8 oz fettuccine pasta
  • 2 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente, then drain, reserving some pasta water.
  2. In a large skillet over medium heat, add olive oil and sear the salmon fillets skin-side down for about 4-5 minutes per side until cooked through. Remove from skillet and flake into chunks.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Pour in the heavy cream and simmer for 2-3 minutes until slightly thickened.
  5. Flake the salmon back into the pan along with lemon zest, then toss with cooked fettuccine and reserved pasta water as needed for consistency.
  6. Finish with grated Parmesan cheese and chopped parsley before serving.
