  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1/2 cup oil-packed sun-dried tomatoes, chopped

  • 1 tsp dried Italian herbs
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prep your ingredients by chopping garlic and tomatoes. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown. Remove from the pan.
  3. In the same skillet, lower the heat and sauté garlic and sun-dried tomatoes for 1-2 minutes until fragrant. Gradually pour in heavy cream while stirring.
  4. Fold in spinach until wilted, then mix in Parmesan cheese until melted.
