Instructions

  1. Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the canned diced tomatoes with their juices and dried herbs. Let simmer for 5 minutes until slightly thickened.
  4. Add fresh spinach and heavy cream, stirring until the spinach wilts down into the sauce.
  5. Return the chicken to the skillet, spooning sauce over each piece. Allow everything to meld together on low heat for another 5 minutes before serving. Top with freshly grated Parmesan cheese.
