Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the Russet potatoes; cut them into evenly sized strips.
  3. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
  4. Drain and thoroughly dry the potatoes using paper towels.
  5. In a large mixing bowl, toss the dried potatoes with olive oil until fully coated.
  6. Add minced garlic, half of the grated Parmesan cheese, salt, and pepper; mix well until evenly coated.
  7. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  8. Bake for 25-30 minutes or until golden brown and crispy.
  9. Immediately sprinkle with the remaining Parmesan cheese; garnish with chopped parsley before serving.
