  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix grated zucchini, eggs, sugar, oil, and vanilla until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined; do not overmix.
  5. Gently fold in chocolate chips.
  6. Fill muffin cups three-quarters full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for 5 minutes in the pan before transferring to wire racks.
