  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber (finely chopped)
  • 2 tbsp fresh dill (chopped)
  • Juice of 1 lemon
  • 3 garlic cloves (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups water or chicken broth

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
  2. In the prepared dish, combine uncooked rice, water or broth, salt, and pepper.
  3. Place seasoned chicken breasts on top of the rice mixture, spacing them evenly.
  4. In a bowl, mix Greek yogurt, cucumber, garlic, dill, lemon juice, salt, and olive oil until smooth.
  5. Spoon tzatziki sauce generously over each chicken breast.
  6. Cover the dish with foil and bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C). Remove foil during the last 10 minutes for crispy edges.
